better than losing them.

green tomatoes are edible, but even if you don't
eat them green they may eventually ripen.

just keep an eye on them for ones the begin to rot.

I've heard some say it is better to cut the part of the vine(s)
with fruit and bring that in. But I don't have any experience
trying that.

Will the chill be sufficiently short lived that you can
cover them up one night?

The *really* green ones make a nice addition to giardienera.

i've never done any experiments to know what is
better or not, but it works well enough without having
to deal with all those stems. sometimes we've had
several tables set up in the garage for all of them
to be able to be left to ripen but this year i brought
most of them into the house in stages so we didn't
have many decent tomatoes left to worry about. so many
have deep splits in them this late season (due to heat
and me not watering) that they've been left to be buried.
i didn't want to water them that much because the flavor
was so sweet and i didn't want to dillute it.

we bought some tomato plants at a nursery and got them in the
beds very late. they didn't grow well or produce much. pulled
them up last night. frost is very near. they didn't root like
i'm used to seeing and think it may be from the weather already
being hot when they were planted.

the pepper plants i got at the nursery on the other hand did
great.

we toss them in a bit of flour and fry in butter.

What is your recipe?

i like them crispy and well browned on the outside and juicy in
the middle. i cut them 1/4 to 3/8 inch thick, set the slices on
a saucer with some flour in it, flip, fry both sides in butter.
no particular time, they're done when they look and feel right.

How thin do you cut them?

about 1cm, flip after a bit. i like things on the
firm side so they don't get too mushy, but you can do
what you like according to your own preferences. :)

with a coating on them i'd probably want it cooked
to golden brown at least (or more) and that is too
mushy for me.

you mention bitterness being an issue but that hasn't
ever been a problem for me as i tend to like things
tart.
