30 DAY CAKE
Very old recipe
( like a holiday cake baked at thanksgiving time and stored in cool place till christmas time.)
2 c. sugar
3 eggs
1 c. butter
1 c. buttermilk
1 tsp. soda
1 c. blackberry jam (blueberry, or strawberry may be used.)
1 c. raisins (or currents)
1 c. chopped nuts
1 1/2 c. coconut
2 c. flour
1 level tsp. allspice
Cream butter and sugar. Add eggs, soda milk and jam. Add flour and mix well. Add nuts, raisins, coconut Mix well.
Cook in 2 9" layer pans
Bake at 350 deg. till done. Test with pick in middle as you would any cake.
ICING
Cook 2 c. sugar, 1/2 c. milk and 1c. butter until thick.
Spread icing between layers, top and side.
Place in air-tight container.
Slice a piece of apple and place all around cake. Wet cheesecloth with grape juice and place in container over the cake. Keep in cool place for 30 days.
* Tuperware containers and pressure cooker pans may be used as containers Be sure to cover hole on lid of pan if using one. I have used similar covers for English cakes and they work well as containers.
