? Kefir Manna Cake with Baking Powder
" Ingredients:
Semolina - 1 cup
Wheat flour - 4 tablespoons
Kefir (I used with 2.5% fat content) - 1 cup
Sugar - 1 cup
Egg - 1 piece
Baking powder - 1 teaspoon
Vanillin - a pinch (or to taste)
Salt - a pinch
Vegetable oil (for greasing the mold)
" Preparation:
1. The kefir for kneading the dough should be at room temperature, so it needs to be either taken out of the refrigerator in advance or warmed in the microwave for 20 seconds. In a deep bowl, we pour in semolina, add flour to it, and mix with a spatula (or a tablespoon).
2. We pour the room-temperature kefir into the mixture of semolina and flour.
3. Mix the mixture of semolina and kefir very well with a spatula, cover the bowl with a lid, and leave the semolina mixture for 20-30 minutes. During this time, the semolina will swell a bit.
4. After this time, we pour sugar into a separate bowl, beat the raw egg, and beat the mixture with a whisk for 2 minutes (until a light, fluffy mixture is obtained).
5. We add the resulting egg and sugar mixture to the bowl with the semolina mixture. We also add baking powder, vanillin, and salt here.
6. Mix with a whisk until a viscous, homogeneous, moderately thick dough is obtained. The dough for the manna cake will resemble medium-fat sour cream.
7. We grease the baking mold (I have a silicone mold with a diameter of 17 centimeters) with vegetable oil, and pour in the dough.
8. We put the mold with the dough into a preheated oven at 180 degrees for 45-55 minutes (ovens are different, so the time may vary). To check the readiness of the manna cake, just pierce it from above with a dry wooden skewer. If there are no traces of dough on the skewer after the piercing, then the cake is ready. We take the manna cake out of the oven and let it cool without removing it from the mold.
9. And then the airy, tasty, fragrant manna cake, kneaded with kefir and baking powder, is taken out of the mold, cut into pieces, and served with tea, milk, coffee, or another favorite drink.
