Title: Wild Mushroom Pizza With Garlic & Thyme

1 tb Olive oil
8 oz Fresh wild mushrooms;
- such as oyster, shiitake,
- and chanterelle,
- trimmed & sliced
3 cl Garlic; minced
1 ts Fresh thyme; minced
Salt
Black pepper; freshly ground
Traditional Pizza Dough
Preheat the oven to 450?F.
Heat the olive oil in a large skillet over medium heat. Add the
mushrooms and garlic and cook, stirring, until softened, about 5
minutes. Add the thyme and salt & pepper to taste. Combine to cook,
stirring occasionally, until the liquid evaporates, 7 to 10 minutes.
Punch the dough down. On a lightly floured surface, roll out or
stretch the dough into a circle about 1/4" thick. Lightly oil a pizza
pan or baking sheet and place the dough on it, stretching it to fit.
Bake on the bottom oven rack for 8 minutes.
Remove from the oven and top with the mushroom mixture, spreading it
to within 1/2" of the edge. Bake until the crust is golden brown, 10
to 12 minutes. Serve hot.
