Title: Cook Up Rice
Categories: Rice
Yield: 1 Batch
1/2 lb Cooked meat
1/4 lb Salt meat
4 1/2 c Water
2 Spring onions; up to 3
2 tb Cooking oil
1 tb Brown sugar
1/2 ts Salt
2 c Rice
Pepper; to taste
1 Onion
1 Tomato; up to 2
Thyme or parsley
1 tb Cooking butter (optional)
Wash and soak raw meat and prepare seasonings. Heat the oil and add
sugar and fry until it bubbles. Add seasonings, fry until golden
brown.
Cut salt meat into neat pieces and add to the seasonings with water,
rice, and salt. Bring to boil and remove skin and bones from cooked
meat, cut into pieces, add rice when it's nearly done. For added
flavor add 1 tb cooking butter just before serving.
