Title: Corn Pudding

Yield: 1 Batch
3 tb Corn meal
1 tb Salt
1/2 ts Paprika
1/2 c Milk; cold
2 c Milk; hot
1 tb Butter
2 c Fresh corn pulp
2 Eggs
1 tb Green or red pepper;
- chopped (optional)
Stir corn meal with salt, paprika, and cold milk.
Stir into hot milk. Cook and stir over boiling water until the mixture
thickens.
Remove from heat and stir in the other ingredients.
Turn into a buttered baking dish suitable to set on the table. Set in
a pan of boiling water and cook slowly until the center is firm.
Serve hot with meat course. A tablespoon of chopped green or red
pepper may be added if desired.
