5 lb Pork butts; coarsely ground
1 ts Whole mustard seeds;
- heaping, pulverized
1 ts Whole allspice; heaping
1/2 ts Whole black peppercorns
1/2 lg Onion
1 cl Garlic; finely minced
1/4 c Salt
1/2 c Water
Mix thoroughly, and stuff into casings. Poach or boil for
20 minutes.
