Needing to rip some CDs, and also wanting the track data to
download and self-populate, I can no longer use Windows Media
    Player.

I have MediaMonkey 2024, which is good for the actual ripping,
but if I need to create or tidy the tags, it really seems
reluctant to play ball, especially editing common fields for all
    tracks.

I also have the older MediaMonkey App 4.1.30.1914, which edits
tags very easily, but won't rip unless I upgrade to Gold.

Am I missing a trick, or is that just the way things are?

Not sure. I can recommend fre:ac for ripping, seems a lot faster than what
    I used before.

And then I use EasyTag for tags.
