EMR don?t seem to have a problem filling their trains. 1st seems popular.
So why bother to be nice to the passengers.
That said, the onboard crew are pretty good and cheerful. I?d rather they >went back to an earlier philosophy, decent food but you had to pay for it.
I?d rather they went back to an earlier philosophy, decent food

Not sure that would generate profit.
It does for low cost airlines. They see catering as a method of offsetting >the cost of cabin staff that they are legally required to provide. Whether >that?s achievable on a relatively short duration train trip is an
interesting question.
I wonder if a branded offering might make sense, as BA did with M&S?
The partner provides a range of popular items, and might even pay
part of the wages of the catering staff member.
I suspect the demise of 1st class business travellers on expenses and the >rise of 1st class leisure travellers will doom any paid for idea.

Low cost airlines generally make œ5 profit per person per seat, so
selling food/drinks and duty free is quite important to maintain that margin. I used to be a big fan of BMI-Baby's bacon butties, which they managed to serve on a flight as short as 50 minutes in the air.

I'm going on a railtour in a few week's time, and far prefer to bring my
own food and drink, than pay over œ100 for their on-board catering.
Still get free tea/coffee and savoury snacks.
Unusually, the operators this time want a œ10 corkage fee "per bottle",
but it doesn't mention what happens for cans of beer.
Or for cans of wine?

Indeed. On such trips I often pack 187/200ml cans or bottles.

Recliner?s link just says œ10 per person, and doesn?t mention the bottle.
œ40 seems a bit steep for a table of 4 sharing a bottle, but if it doesn?t increase with the number of bottles might be worth investigating.

One page says per person, and another per bottle. I note that no limit
on the size of bottle is mentioned, nor is a charge for drinks arriving
in other types of vessel.
