Title: Homemade Chimichurri Sauce

Yield: 1 -1/2 cups
1/3 c White onion
1 c Fresh flat leaf parsley;
- lightly packed
1 ts Dried oregano
1 cl Garlic; up to 2
1 ts Coarse salt
1/2 Black pepper; fresh ground
1/2 ts Red pepper flakes; or more
2/3 c Extra virgin olive oil
1/3 c Red wine vinegar
Place all ingredients in a food processor and pulse until it becomes a
relish like consistency. Keep refrigerated up to 4 days. Or freeze in
ice cube tray.
