so I right clicked the 'rocket ship' (RS) icon for the program in the
menu, and chose 'properties'. Then I clicked on the rocket ship icon in
the Launcher Properties box that appeared and I was able to change it to
one from the many available in the various categories listed. Then I repeated that for each RS program. However the actual programs the
launchers were for were not listed, so I just chose icons that would
remind me what the program was.

ARM CPUs, you would want to download the third one down for a "normal" x86_AMD64 CPU.

You can go here:
https://appimage.github.io/Helium/
and right click the Helium icon and save it to a folder of your choice. Create your launcher and click on the rocket ship generic icon and then select browse.
Browse to wherever you saved the Helium icon and select it and that's it.
